CARAMELIZED ONION CORNISH PASTIES
Caramelized Onion Savory Jam
Straight from the English countryside to your kitchen, the Cornish pasty is a golden savory pastry filled with beef, potatoes, rutabaga, and Blake Hill’s Caramelized Onion Savory Jam for a rich, hearty twist. The ultimate comfort food bite!
For the Pastry:
4 cups All-Purpose Flour
1 cup Cold Butter
½ tsp Salt
About ½ cup Cold Water
For the Filling:
12 oz Beef Skirt
1 Medium Potato
1 Small Rutabaga (or Turnip)
Coarse Sea Salt & Fresh Ground Pepper
1 Egg, beaten (for brushing)

Directions:
In a large mixing bowl, combine the flour and salt. Cut the cold butter into small cubes and rub into the flour with your fingertips until the mixture resembles coarse breadcrumbs. Gradually add cold water, mixing until the dough comes together. Divide into four equal balls, wrap in cling wrap, and chill for at least 30 minutes.
Peel and dice the potato and rutabaga into medium cubes and dice the beef into small cubes. Combine in a bowl and season generously with salt, pepper, and Caramelized Onion Savory Jam. Mix well.
Preheat oven to 400°F. On a lightly floured surface, roll one dough ball into an even circle about 8 inches across.
Place a quarter of the filling on one side of the pastry circle, leaving a border. Brush the edges with beaten egg, fold the pastry over to create a half-moon shape, and press the edges together to seal. Crimp the edges by folding and pressing to create a tight seal.
Repeat steps 3 and 4 for the remaining dough balls.
Place pasties on a parchment-lined baking sheet. Brush tops with remaining beaten egg and cut a small slit in each for venting. Bake 45-50 minutes until golden brown and cooked through.
Allow to cool slightly before serving. Enjoy!
Chef’s Tip: Make it vegetarian by replacing the beef with mushrooms.
