For the Lamb:

4 Tbsp Caramelized Garlic Infused Olive Oil, divided — available in 100ml · 250ml · 500ml · 750ml

1 lb Ground Lamb

2 Tbsp Lemon & Dill Tzatziki Rub & Seasoning

1¾ tsp Roasted Garlic Sea Salt, divided


For the Lemony Tahini Dressing:

½ cup Greek Yogurt

3 Tbsp Tahini

2 Lemons, juiced

2 Tbsp Meyer Lemon White Barrel Aged Balsamic — available in 100ml · 250ml · 500ml · 750ml


For the Wraps:

Butter Lettuce, leaves separated

2 Roma Tomatoes, diced

1 Large Shallot, diced

½ English Cucumber, diced

½ cup Feta


Directions:

  1. Heat a skillet over medium-high heat and add 2 Tbsp Caramelized Garlic Infused Olive Oil. Once hot, add ground lamb, Lemon & Dill Tzatziki Rub & Seasoning, and 1 tsp Roasted Garlic Sea Salt. Cook 7-8 minutes or until browned.

  2. Meanwhile, in a small bowl, combine the Greek yogurt, tahini, lemon juice, Meyer Lemon White Barrel Aged Balsamic, remaining 2 Tbsp Caramelized Garlic Infused Olive Oil, and remaining ¾ tsp Roasted Garlic Sea Salt.

  3. Create each wrap by taking a butter lettuce leaf and layering with lamb, tomatoes, shallot, cucumber, feta, and a drizzle of lemony tahini dressing. Enjoy!
