30 MINUTE RUSTIC TOMATO AND PROSCIUTTO TAGLIOLINI
Garlic & Herb Infused Olive Oil

Whip up this easy and delicious Rustic Tomato and Prosciutto Tagliolini in just 30 minutes for a weeknight dinner packed with flavor! The perfect balance of savory prosciutto, sweet blistered tomatoes, and fresh pasta makes this a comforting meal the whole family will love.
Ingredients:
1 Pasta Rock (optional, or 1 Tbsp kosher salt)
1 Package Long Pasta (such as Truffle Tagliolini)
1 Tbsp Garlic & Herb Infused Olive Oil — also available in 250ml, 500ml, 750ml, divided
3 oz Prosciutto, diced
¼ cup Shallot, diced
12 oz Cherry Tomatoes
2 Garlic Cloves, minced
2 Tbsp Bruschetta Dried Herb Blend
2 cups Parmesan and Romano Cheeses, finely grated, plus more to finish
1 Tbsp Fresh Lemon Juice, plus zest for garnish
1 tsp Roasted Garlic Sea Salt
Fresh Basil, chiffonade, for garnish
Directions:
Bring 4 quarts of water to a boil and season with a Pasta Rock or 1 Tbsp kosher salt. Cook pasta until al dente per package directions. Reserve 2 cups of pasta water, then drain.
Meanwhile, heat a wide saucepan over medium-high heat. Add 1 tsp Garlic & Herb Infused Olive Oil. Once warm, add the diced prosciutto and cook until crisp, about 6-7 minutes. Remove and set aside on a paper towel-lined plate.
Reduce heat to medium-low and add the remaining 2 tsp Garlic & Herb Infused Olive Oil. Add the shallot and cook until soft, 2-3 minutes.
Increase heat to medium and add the whole cherry tomatoes. Cook until blistered, about 6-7 minutes.
Add the garlic and Bruschetta Dried Herb Blend. Cook until fragrant, about 1 minute.
Add the drained pasta, cheese, lemon juice, Roasted Garlic Sea Salt, and 1 cup pasta water. Toss continuously with tongs until the sauce emulsifies. Add more pasta water as needed.
Return the crispy prosciutto to the pan and stir to combine.
Plate and top with extra cheese, lemon zest, and fresh basil. Enjoy!
Recipe Note: If you don’t have a Pasta Rock on hand, it’s still important to season your pasta water! We recommend 1 Tbsp of salt per 4 quarts of water — it should taste like the sea.
